Maria Crumb’s Cheesecake Banana Bread Recipe

 This recipe is a melt-in-your-mouth combo of
creamy vanilla cheesecake and the moistest banana
bread.

Ingredients

Batter:

  • 4 Overripe Bananas 
  • 3 Eggs
  • ½ Cup Vegetable Oil or Melted Butter
  • ½ Cup Granulated Sugar
  • ½ Cup Brown Sugar
  • 1 Tbsp Vanilla Extract
  • 1 Tbsp Cinnamon 
  • 1 ½ Cups All Purpose Flour
  • ½ Tsp Salt
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda

Cheesecake Filling:

  • 1 Block of Cream Cheese
  • ½ Cup Granulated Sugar
  • ¼ Cup All Purpose Flour
  • 1 Tsp Vanilla Extract

Crumble Topping:

  • ½ Cup Oats
  • ¼ Cup All Purpose Flour
  • ⅛ Cup Brown Sugar
  • ⅛ Cup Granulated Sugar
  • ½ Tbsp Cinnamon

Large, medium, and small mixing bowls.

Measuring cups and spoons.

Instructions

  • Preheat oven to 350°F. 
  • Grease two desired cake pans (ex. bundt, loaf, muffin).
  • Start making the batter in a large mixing bowl, by mixing oil and sugars. 
  • Next whisk in eggs. 
  • After that, add bananas directly to the mixture, and smash them with the whisk until you have a consistency similar to baby food. 
  • Add your vanilla and cinnamon. 
  • Then, sift flour, salt, baking powder, and baking soda directly into a bowl and mix. 
  • Set aside. 
  • In a medium bowl, start making the cheesecake filling. 
  • Mix softened cream cheese, sugar, flour, and vanilla. 
  • Set bowl aside. 
  • In a small bowl make crumble topping. 
  • Mix oats, flour, sugars, and cinnamon. 
  • Take greased pans and sprinkle the desired amount of crumble topping to the bottom of the pan (will have some leftover). 
  • Then, fill your pan a third of the way with batter. 
  • With a spoon, scoop half of your cheesecake filling and spread it over the batter to look like a stripe through the center. The other half of the filling is for the other pan. 
  • Next, add just enough batter to cover the cheesecake filling as to not overfill. 
  • If you want, more crumble can be sprinkled over the top of the batter as well. 
  • Before placing the pans in the oven, cover with tin foil (unless it’s a muffin tin). 
  • Bake for 15 minutes, remove foil, then bake for another 10 (or until the toothpick comes out clean). Muffin tin will only take 10-15 minutes for total bake time. 
  • Serve hot or cool.
