Just a Bite – Santhi’s Mee Goreng (Malaysian hawker-style stir-fry noodles)
In Malaysia, you can find this noodle dish in the market, or by the roadside.
Ingredients
1 pack of fresh/frozen yellow noodles blanch in boiling water for 2 minutes and strain. You can use any type of noodles, even spaghetti. If using dried noodles just precook according to the instructions on the box)
1 cup cabbage
1/2 bean sprouts
1 cup chopped kale
1 cup shredded carrots
1/2 cup chopped cilantro
2 stalks of scallions (chopped)
2 shallots (diced)
3-4 cloves garlic
2 tablespoons sambal olek or fresh chili paste
1 tablespoon Kicap Manis (sweet soy sauce)
2 tablespoon soy sauce
2 tablespoon oyster sauce
1 teaspoon sesame oil
Black & white sesame seeds for garnish (optional)
3 tablespoon vegetable oil

Instructions
- Heat oil on a wok or a deep skillet.
- When oil is just about getting smoky, add Cabbage, bean sprouts, kale, and shallots. Stir for 3 minutes or until the cabbage softens and starts to brown.
- Add garlic, chili, and the rest of the ingredients (sweet soy sauce, soy sauce, oyster sauce, sesame oil)
- Add noodles, stir, and mix all ingredients. Add carrots and cilantro.
*This is a flexible dish. You can add any vegetables and protein of your choice. Tofu is also a great addition. My family loves a side of soft-boiled eggs on the side.
