Santhi’s Sweet Potato and Cauliflower Fritters Recipe

A mixture of sweet potatoes, cauliflower, and seasonings dipped in batter and fried.

Ingredients

1-2 small sweet potatoes (peeled and cut lengthwise about a quarter cm)

1 small cauliflower or 1/2 of a big one.

1 cup plain flour

1 teaspoon turmeric

1teaspoon salt

1 1/4 cup club soda

1/2 cup Vegetable/Canola oil

Medium bowl

Small/medium size sauce pot

Spatula

4 plates


Instructions

In a bowl, whisk flour, turmeric, and salt. Add club soda. The batter should be a pancake batter consistency. Add more liquid or flour if needed.

Heat a small deep saucepan or small wok. Add oil. When oil is hot, in small batches add the potatoes/cauliflower in batter and fry. 4 to 5 minutes each side for the sweet potatoes. About 3 minutes for cauliflower, until golden brown. Eat on its own or goes well with sweet chili sauce.
